Seared Wild Digby Sea Scallops

Cauliflower Pureé,
Walnut & Green Apple Salad

Wine: Chardonnay, 2006, Norman Hardie, Beamsville

The Prince Edward County wine was aged in oak which imparted this very unappetizing perming/hair colouring solution stench making it hard to appreciate the nose. However when paired with the grassy sharp flavours of the pea shoots, the tannic walnut, green apple, and parsley salad tossed in rich browned butter, it was actually quite nice.
